Marjolaine on "C'est mon assiette" (It's my plate)
Marjolaine NANTILLET (Alimentation & Santé, 2018, Beauvais), co-founder of L'Atelier du Ferment, recently shared her expertise and passion for fruit kefir during an appearance on the "C'est mon assiette" radio show.
Marjolaine detailed the making of this slightly fizzy, low-alcohol drink (less than 1%), obtained through a natural fermentation process using kefir grains, water, sugar, citrus and dried fruit. She also highlighted the intestinal health benefits of kefir, thanks to its rich probiotic content.
The alumna also spoke of the family history behind her company, which she founded with her mother, based on a recipe handed down for five generations. Today, this know-how is a resounding success: with 17 employees and 250,000 bottles produced every year, their fruit kefir has made its mark in the world of fermented beverages.
